The Spicy Sambal Bean Stir-Fry

The Main: 150g Snake beans (trimmed and cut into 5cm lengths).

Aromatics: 1 clove garlic (minced).

Sambal Sauce: 1 tbsp Sambal Oelek, 1 tbsp soy sauce.

Pantry Staple: 1 tbsp cooking oil.
Method

Aromatic Base: Heat the oil in a pan over medium-high heat. Add the minced garlic and stir-fry for about 20 seconds until it smells fragrant.

The "Steam-Fry" Technique: Add the snake beans to the pan and toss them in the garlic oil for 1 minute.

Tenderness Step: Add 1 tablespoon of water to the pan and immediately cover with a lid. Let the beans steam for 2 minutes. This ensures the interior of the long bean is cooked through while the outside stays vibrant and snappy.

Blister: Remove the lid and continue to fry the beans for another 2–3 minutes over high heat until the water has evaporated and the skins of the beans begin to slightly blister and char.

The Spicy Glaze: Reduce the heat to medium. Pour the Sambal Sauce over the beans and toss quickly for 30–45 seconds until the sauce has thickened and every bean is coated in a glossy, spicy red glaze. Serve immediately.
