The Golden Garlic Bean Stir-Fry

The Main: 150g Snake beans (trimmed and cut into 5cm lengths).

Optional Protein: 60g pork mince (can be swapped for minced mushrooms for a vegetarian "meaty" texture).

Aromatics: 3 cloves garlic (finely minced—be generous!), 1 tsp ginger (minced).

Sauce Base: 1 tbsp soy sauce, 1/2 tsp sugar, 1/2 tsp sesame oil, 1 tsp rice wine.

Pantry Staple: 1 tbsp cooking oil.

The "Dry-Fry" Beans: Heat the oil in a pan over medium-high heat. Add the snake beans and fry for 4–5 minutes, stirring occasionally. You want the skins to become wrinkled and slightly charred. Remove the beans from the pan and set aside.

Brown the Protein (Optional): If using pork mince (or mushrooms), add them to the same pan. Stir-fry for 2–3 minutes until the pork is crispy and fully browned. If cooking the vegetarian version, skip to Step 3.

The Garlic Blast: Reduce the heat to medium. Add the minced garlic and ginger. Stir-fry for 30–45 seconds until the garlic is fragrant and turns a light golden color—do not let it burn!

The Final Toss: Return the beans to the pan. Pour the Sauce Base over everything.

Glaze: Increase the heat to high and toss vigorously for 30 seconds. The sauce should reduce quickly, coating the beans (and mince) in a savory, garlic-heavy glaze. Serve immediately.
