The Creamy Satay Stir-Fry
Ingredients
-
The Main: 1/2 cup Broccoli florets, 1/4 cup Sliced Carrots, 1/4 cup Snap Peas.
-
Optional Protein (150g): Thinly sliced chicken, beef, pork, or firm tofu cubes.
-
Satay Sauce Pouch: 2 tbsp Peanut Butter (smooth), 1 tbsp Soy Sauce, 1 tsp Honey/Sugar, 1 tsp Curry Powder, 2 tbsp Coconut Milk (or water), 1/2 tsp Lime Juice.
-
Aromatics: 1 tsp minced Garlic, 1/2 tsp minced Ginger.
-
Pantry Staple: 1 tbsp Cooking Oil.
Method
-
Sear the Protein (Optional): Heat half the oil in a pan over medium-high heat. Add your Protein and stir-fry until fully cooked (3–4 minutes for meat, 5–6 minutes for tofu). Remove and set aside.
-
Stir-Fry Vegetables: Add the remaining oil to the pan. Toss in the broccoli, carrots, and snap peas.
-
Pro-Tip: Add 1 tablespoon of water and cover for 60 seconds to "steam-soften" the broccoli, then uncover and fry until the water evaporates.
-
Fragrant Aromatics: Add the garlic and ginger to the center of the pan. Stir-fry for 30 seconds until fragrant.
-
The Satay Glaze: Reduce the heat to medium-low (peanut butter can burn easily). Pour in the Satay Sauce Pouch and return the cooked protein to the pan.
-
The Final Toss: Stir constantly for 1 minute. The sauce will thicken quickly and turn glossy as it coats the vegetables and protein. If it becomes too thick, stir in 1 teaspoon of water to loosen it. Serve immediately.
