The Aromatic Sizzle Steam

Ingredients

  • Protein (150g): Fish fillet, chicken breast, firm tofu, or 200g mushrooms (King Oyster, Shiitake, or Enoki).

  • Aromatics (Julienned): 1 tbsp ginger (cut into fine matchsticks), 2 tbsp spring onion (cut into fine strips).

  • Steaming Sauce: 2 tbsp light soy sauce, 1/2 tsp sugar, 1 tbsp water, 1/2 tsp sesame oil.

  • The Sizzle: 2 tsp neutral cooking oil.

Method

  1. Prep & Season: Pat your Protein dry.

    • Chicken Tip: Slice chicken into 1.5cm medallions against the grain to keep it juicy.

    • Mushroom Tip: If using King Oyster or Shiitake, slice them into 1cm thick planks. If using Enoki, trim the roots and pull them into small bundles.

    • Place the protein on a heat-safe plate and scatter half the ginger over it.

  2. Steam: Place the plate into a steamer over boiling water. Cover and steam—8–10 minutes for fish, chicken, or tofu, and 5–6 minutes for mushrooms—until tender.

  3. Discard & Dress: Carefully remove the plate. Pour off any excess liquid that pooled on the plate. Remove the steamed ginger. Pour the Steaming Sauce directly over the protein.

  4. Top with Freshness: Scatter the remaining fresh ginger and the spring onion strips directly on top of the cooked protein.

  5. The Sizzle: Heat the cooking oil in a small pan until shimmering and just starting to smoke. Immediately pour the smoking oil over the fresh aromatics; it should sizzle loudly, "flash-cooking" the ginger and onions into the sauce. Serve immediately.
