Ingredients

  • Protein (150g): Cubed chicken thigh, sliced pork, beef, firm tofu, or 200g Oyster mushrooms (torn into strips).

  • The Crunch: 1/2 cucumber (sliced into rounds or sticks for a fresh side).

  • Lemongrass Marinade: 1 tbsp minced lemongrass (fresh or paste), 1 tbsp fish sauce (or vegan fish sauce), 1/2 tsp sugar, a pinch of salt, 1 small shallot (minced).

  • The Sizzle: 1 tsp cooking oil.

Method

  1. Marinate: Toss your Protein with the Lemongrass Marinade and let it sit for at least 5 minutes.

    • Pro-Tip: If using beef or pork, a 10-minute marinade will help the salt in the fish sauce tenderize the meat slightly.

  2. Heat & Sear: Heat 1 tsp of oil in a pan over medium-high heat. Add the protein, spreading it out in a single layer.

  3. The Caramelization (10–12 mins): Cook undisturbed for 2–3 minutes to get a golden crust, then stir-fry.

    • Note: Because of the sugar in the marinade, the sauce will darken and become "sticky." If it starts to brown too quickly before the meat is done, turn the heat down to medium.

  4. Serve & Refresh: Transfer the caramelized protein to a plate. Serve immediately over rice or noodles with the fresh cucumber on the side. The cool, crisp cucumber is essential for balancing the salty, savory heat of the lemongrass.
