Stir-Fry with Black Bean Sauce

Ingredients

  • Protein (125g): Thinly sliced beef, pork, chicken, firm tofu, or 150g sliced mushrooms (Shiitake or Portobello are best here for their deep, earthy flavor).

  • Marinade: 1/2 tsp cornstarch, 1/4 tsp soy sauce, 1/4 tsp oil.

  • Produce: 1/4 cup bell peppers (sliced), 1/4 cup onion (sliced).

  • Aromatics: 1/2 tsp chopped garlic, 1 tsp chopped fermented black beans.

  • Black Bean Sauce: 2 tbsp chicken broth, 1 tbsp soy sauce, 1/2 tsp sugar, 1/2 tsp sesame oil, 1/2 tsp cornstarch.

Method

  1. High-Heat Sear: Heat 1 tsp of oil in a pan over high heat. Add your Protein and stir-fry quickly (60–90 seconds for meat slices until browned; 3–4 minutes for tofu/mushrooms until golden). Remove from the pan and set aside.

  2. Stir-Fry Aromatics: Add another 1 tsp of oil to the pan. Toss in the onions, bell peppers, garlic, and black beans. Stir-fry for 2–3 minutes until the vegetables are tender-crisp.

  3. Thicken Sauce: Stir the sauce pouch and pour it into the pan. Stir for 30 seconds until glossy.
    Balance Tip: Fermented black beans are naturally very salty. If the sauce reduces too fast and looks too dark or tastes too salty, stir in 1–2 tablespoons of water immediately. This thins the saltiness and keeps the glaze silky.

  4. The Final Toss: Return the protein to the pan. Toss vigorously for 30 seconds to coat everything in the glaze.

  5. Serve: Transfer immediately to a plate and serve hot.
