Stir fried with Oyster Sauce
Ingredients
- Protein (150g): Thinly sliced beef, or chicken, pork, fish, tofu, or 200g of sliced mushrooms.
- Aromatics: 3 spring onions (cut into lengths), 3 slices ginger, fresh coriander (for garnish).
- The "Splash": 1 tsp Rice wine (reserved for the final toss).
- Marinade: 1.5 tsp soy sauce, 1 tsp rice wine, a pinch of baking powder, 1/4 tsp sugar, 1.5 tbsp water, 1/2 tsp cornstarch, 1 tsp oil.
- Seasoning Sauce: 1.5 tsp oyster sauce, 1/2 tsp soy sauce, 1/4 tsp sugar, a pinch of black pepper, 1/4 tsp sesame oil, 1 tbsp water, 1/4 tsp cornstarch.
Method
- Marinate: Combine your Protein with the marinade ingredients; let it sit for at least 20 minutes (or up to 1 hour for beef) to ensure it stays tender.
- Sear Protein: Heat 1 tbsp of oil in a pan over medium-high heat; sear the protein until it just changes color, then remove and drain.
Mushrooms: Start them in a dry pan (no oil) over medium-high heat. Let them release their moisture and brown slightly first. Once they look "toasty," then add your oil and proceed with the recipe.
- Fragrant Base: Wipe the pan, add a teaspoon of fresh oil, and stir-fry the ginger and spring onions for 30 seconds until the aroma fills the kitchen.
- The Glaze: Return the protein to the pan and pour in the seasoning sauce; toss rapidly over high heat for 30–60 seconds until the sauce thickens into a glossy glaze.
- Finish: Splash in the rice wine, give it one final toss, and serve immediately topped with fresh coriander leaves.
