Sticky Soy Sauce Glaze Chicken Wings

Ingredients

  • Protein (150g): Thinly sliced beef, pork, chicken breast/thigh, firm tofu, or 200g mushrooms.

  • Aromatics: 1 tsp minced ginger, 1/2 tsp minced garlic.

  • The Glaze Mix: 2 tbsp soy sauce, 1 tbsp sugar (or honey), 1 tsp rice wine, 1/2 tsp dark soy sauce.

  • The Sizzle: 1 tbsp cooking oil.

Method

  1. The High-Heat Sear: Heat oil in a non-stick pan over medium-high heat. Add your Protein and sear until browned on both sides.

    • Tip: If using sliced beef, pork, or chicken, only sear for 2 minutes to keep it tender. For tofu or mushrooms, sear for 5 minutes until golden.

  2. Infuse Aromatics: Reduce heat to medium. Add the ginger and garlic and stir-fry for 30 seconds until the fragrance fills the pan.

  3. Add Glaze: Pour the glaze mix over the protein. Bring to a simmer immediately.

  4. The Quick Braise: Cover the pan. For sliced meats, simmer for only 3 minutes; for tofu or mushrooms, simmer for 5–6 minutes. This ensures the flavor penetrates without drying out the protein.

  5. Caramelize: Uncover the pan and increase the heat to high. Stir constantly for 1 minute as the sauce reduces into a thick, mahogany glaze that clings to every piece. Serve immediately.
