Steamed Spareribs with Fermented Black Beans

Ingredients

  • Protein (150g): Pork spare ribs (cut small), or chicken thighs, white fish fillet, firm tofu, or 200g large mushroom caps.
  • Aromatics: 1 tbsp fermented black beans (rinsed & minced), 1 clove garlic (chopped), 1cm ginger (minced), 1 spring onion (white part chopped), 1/2 red chili (sliced).
  • The Sizzle: 1 tbsp cooking oil.
  • Seasoning Sauce: 1 tsp rice wine, 1 tbsp soy sauce, 1/2 tsp sugar.

Method

  1. Sauté Aromatics: Heat oil in a pan over medium heat. Sauté the garlic, ginger, black beans, and half the spring onions for 1 minute until fragrant.
  2. Flash Sear: Add your Protein to the pan. Stir-fry for 1 minute to lightly brown the exterior and coat it in the aromatic oil.
  3. Season: Pour in the seasoning sauce and toss for 30 seconds to ensure the protein is well-covered, then remove from heat.
  4. Steam: Transfer the mixture to a heat-proof dish. Steam over high heat—40 minutes for ribs/pork/chicken, or 10–12 minutes for fish, tofu, or mushrooms.
  5. Garnish: Carefully remove the dish from the steamer, sprinkle with the red chili and remaining spring onions, and serve hot with rice.
