Steamed Fish with Fermented Black Beans
Ingredients
- Protein (150g): White fish fillet
- Aromatics: 1 tbsp fermented black beans (rinsed & minced), 1 clove garlic (chopped), 1cm ginger (minced), 1 spring onion (white part chopped), 1/2 red chili (sliced).
- The Sizzle: 1 tbsp cooking oil.
- Seasoning Sauce: 1 tsp rice wine, 1 tbsp soy sauce, 1/2 tsp sugar.
Method
- Sauté Aromatics: Heat oil in a pan over medium heat. Sauté the garlic, ginger, black beans, and half the spring onions for 1 minute until fragrant.
- Flash Sear: Add your Protein to the pan. Stir-fry for 1 minute to lightly brown the exterior and coat it in the aromatic oil.
- Season: Pour in the seasoning sauce and toss for 30 seconds to ensure the protein is well-covered, then remove from heat.
- Steam: Transfer the mixture to a heat-proof dish. Steam over high heat — 10–12 minutes for fish
- Garnish: Carefully remove the dish from the steamer, sprinkle with the red chili and remaining spring onions, and serve hot with rice.
