Crispy Salt & Pepper Tofu
Ingredients

The Main: 150g Firm Tofu, cut into 2cm cubes and patted very dry.

The Coating: 2 tbsp cornstarch, 1/2 tsp salt, 1/2 tsp ground white pepper (mixed in a small bag).

Aromatics: 1 red chili (deseeded and sliced), 1 spring onion (sliced), 2 cloves garlic (minced).

The Seasoning: 1/2 tsp salt, 1/2 tsp cracked black pepper, 1/4 tsp sugar.

Pantry Staple: 2 tbsp cooking oil.
Method

Coat the Tofu: Place the dry tofu cubes into the bag with the Coating (cornstarch, salt, white pepper). Shake well until every cube is evenly dusted. Shake off any excess starch.

The "Non-Stick" Fry: Heat the oil in a non-stick pan over medium-high heat. Once the oil is shimmering, add the tofu cubes in a single layer.

Tip: Do not move the tofu for the first 2 minutes. This allows a hard crust to form so the cubes flip easily without sticking.

Golden & Crispy: Continue to fry for 6–8 minutes, turning occasionally, until all sides are golden brown and "crisp" to the touch. Remove the tofu and set it on a paper towel, but keep about 1 tsp of oil in the pan.

Sizzle the Aromatics: In the same pan, add the garlic, chili, and spring onions. Stir-fry for 30–45 seconds until the garlic is fragrant and the chili is bright.

The Final Toss: Return the crispy tofu to the pan. Sprinkle the Seasoning (salt, black pepper, sugar) over the top. Toss vigorously for 30 seconds so the aromatics and seasoning cling to the tofu crust. Serve immediately while hot and crunchy.
