Black Pepper Stir-Fry
Ingredients

Protein (150g): Basa/White fish fillet (cubed), sliced beef, pork, chicken, firm tofu, or 200g King Oyster mushrooms (sliced into rounds).

Coating: 1 tsp cornstarch (tossed with the protein).

Produce: 1/4 cup bell peppers (sliced), 1/4 cup onion (sliced).

Aromatics: 1 tsp chopped garlic.

Black Pepper Sauce: 2 tbsp chicken broth, 1 tbsp soy sauce, 1 tbsp coarsely ground black pepper, 1 tsp oyster sauce (or vegetarian mushroom sauce), 1/2 tsp sugar, 1 tsp cornstarch.
Method

High-Heat Sear: Heat 1 tsp of oil in a non-stick pan over medium-high heat. Add your Protein (coated in cornstarch) and sear for 2–3 minutes until browned on at least two sides.

Note: The protein will not be fully cooked yet. Remove and set aside.

Stir-Fry Vegetables: Add the remaining 1 tsp of oil to the pan. Toss in the onions and bell peppers; stir-fry for 2 minutes until tender-crisp.

Add Garlic: Add the chopped garlic and stir-fry for 30 seconds until fragrant.

Thicken Sauce: Shake the sauce pouch well and pour it into the pan. Stir constantly for 30 seconds until the sauce bubbles and thickens into a glossy, dark glaze.

Combine & Finish: Reduce the heat to low. Gently return the protein to the pan.

Gentle Fold: Carefully fold the sauce over the protein for 60 seconds. This allows the heat to finish cooking the center of the meat or fish without breaking it apart. Serve immediately.
