Ingredients

  • Protein (150g): Pork loin, chicken breast, firm tofu, white fish, or 200g large mushroom chunks.

  • Produce: 1/4 bell pepper, 1/2 small carrot (sliced thin), 1 slice pineapple (chunky), 1 garlic clove (minced), 1 small red chili (optional).

  • The Crunch: 2 tbsp cornstarch (for coating).

  • Marinade: 1 tsp soy sauce, 1/2 egg yolk, 1 tsp cornstarch.

  • The Sauce: 2 tsp vinegar, 1 tbsp sugar, 1 tsp tomato paste, 1/4 tsp salt, 3 tbsp water, 1/2 tsp cornstarch.

Method

  1. Marinate & Coat: Toss your Protein in the marinade for 15 minutes. Just before cooking, dredge the pieces in the extra cornstarch until fully coated and dry to the touch.

  2. The Crisp: Heat 2–3 tbsp of oil in a pan over medium-high heat. Fry the protein until golden and crispy on all sides (about 3–4 minutes); remove and drain on a paper towel.

  3. Soften Veg: Wipe the pan, leaving a thin film of oil. Sauté the garlic, carrots, peppers, and chili for 2 minutes until the carrots are slightly tender.

  4. Thicken Sauce: Stir the sauce ingredients to ensure the starch isn't settled, then pour into the pan. Bring to a simmer until it turns translucent and thickens.

The Final Glaze: Quickly toss the crispy protein and pineapple into the bubbling sauce. Stir for 30 seconds to coat every piece evenly and serve immediately while the coating is still crunchy.
