Stir Fried Broccoli
Ingredients

Protein (150g): Thinly sliced beef, chicken, fish, pork, tofu, mushrooms.

Vegetable: 200g Broccoli florets.

Aromatics: 1 slice ginger (shredded).

The "Splash": 1 tsp Rice wine (reserved for the final toss).

Marinade: 1 tsp rice wine, a pinch of ginger, pinch of salt, 1 tsp egg white, 1/2 tsp cornstarch.

Sauce Mix: 1/4 tsp salt, a pinch of sugar, 1/4 tsp sesame oil, 1/2 tsp cornstarch, 1 tbsp water.
Method

Prep & Marinate: Toss your Protein in the marinade ingredients and let it sit for 15–20 minutes to tenderize.

Blanch: Boil a small pot of salted water; cook the broccoli for 1 minute, then immediately drain and rinse with cold water to keep it crunchy and green.

Flash Fry Veg: Heat 1 tsp oil in a pan over high heat; stir-fry the broccoli with a pinch of salt for 30 seconds, then remove and set aside.

Sear Protein: Wipe the pan, add 1 tbsp oil, and fry your Protein over medium-high heat until just cooked through (about 1–2 minutes depending on the choice); remove and drain excess oil.
The Final Toss: Return the ginger to the pan until fragrant, then add the broccoli, protein, and the sauce mix; toss rapidly for 30 seconds, splash with the remaining rice wine, and serve.
