Ingredients

  • The Wrappers: 10–12 Store-bought Dumpling Wrappers (round).

  • The Filling (Pick One):

    • Meat Option: 125g Mince (Pork, Chicken, or Beef).

    • Vegetarian Option: 125g Finely chopped King Oyster mushrooms.

  • The Aromatics: 1/2 cup finely shredded Cabbage, 1 stalk Spring onion (chopped), 1/2 tsp grated Ginger.

  • The Seasoning: 1/2 tbsp Soy sauce, 1/2 tsp Sesame oil, 1/4 tsp Salt, 1/4 tsp Sugar, 1/2 tbsp Cornstarch.

  • Dipping Sauce: 1 tbsp Soy sauce, 1 tsp Black vinegar, a drop of Chili oil.

  • Pantry Staple: 1 tbsp Cooking oil, 1/4 cup water.

Method

  1. Prep the Veg: Mix the shredded cabbage with a pinch of salt. Let it sit for 2 minutes, then squeeze it firmly in your hands to wring out all the liquid. This is the secret to a meaty, non-watery texture.

  2. Mix Filling: In a small bowl, combine your Protein (mince or mushrooms), the squeezed cabbage, spring onions, ginger, and Seasonings. Stir vigorously in one direction for 1 minute until the mixture becomes "tacky" and sticks to itself.

  3. Assemble: Place a wrapper in your hand. Put 1 small teaspoon of filling in the center. Lightly wet the rim with water. Fold the wrapper in half to create a half-moon shape and press the edges firmly to seal.

  4. The Sear: Heat the oil in a small non-stick pan over medium heat. Place the dumplings in the pan (standing up or flat) and fry for 2 minutes until the bottoms are a light golden brown.

  5. The Steam: Carefully pour 1/4 cup of water into the pan and immediately cover with a lid. Steam for 5 minutes (for meat) or 3 minutes (for mushrooms). Remove the lid and let the remaining water sizzle away for 1 minute to re-crisp the bottoms. Serve immediately with the dipping sauce.
