Ingredients

  • The Noodles: 200g Ready-to-fry Chinese Egg Noodles (Chow Mein).

  • The Protein (Pick One): * Meat Option: 180g Chicken breast, Beef, or Pork (thinly sliced).

    • Vegetarian Option: 150g King Oyster mushrooms (sliced into strips).

  • The Protein Marinade: 1/2 tbsp cornstarch, 1 tbsp water, 1 tsp sesame oil, 1 pinch salt.

  • The Produce: 1 head Bok Choy (sliced), 1 cup Bean sprouts, 1 stalk Scallion (chopped, whites/greens divided), 2 cloves Garlic (sliced), and fresh Chili (optional).

  • Chow Mein Sauce Pouch: 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tbsp oyster sauce (or mushroom sauce), pinch of black pepper.

  • Pantry Staple: 2 tbsp Cooking oil.

Method

  1. Marinate the Protein: Toss your sliced Beef, Pork, Chicken, or Mushrooms in the Protein Marinade. Let it sit for at least 5 minutes. This "velveting" process ensures the meat stays tender and the mushrooms savory.

  2. Sear the Protein: Heat 1 tbsp of oil in a wok or large skillet over high heat. Add the protein and stir-fry until the meat is browned and just cooked through (or mushrooms are golden). Remove from the pan and set aside.

  3. Fry the Noodles: Add the remaining 1 tbsp of oil to the same pan. Sizzle the garlic, chili, and the white scallion parts for 30 seconds. Add the noodles and stir-fry for about 1 minute to allow them to pick up the aromatic flavors.

  4. Combine and Sauce: Return the cooked protein to the pan. Add the bok choy and bean sprouts, then pour the Chow Mein Sauce Pouch over the top.

  5. Final Toss: Toss everything together over high heat for 1–2 minutes. The sauce should coat every noodle evenly, and the vegetables should be tender-crisp. Garnish with the green parts of the scallion and serve immediately.
